Non-Baked Lemon Cheese Cake

I tried making a baked newyork cheesecake that I saw from youtube... It seems so easy to make, but my cheesecake turns out to be..... hmmm..., can't described it... Anyway, I feel it was a waste of cheese... cos I have to use 2 x 25og of Philadelphia Cream Cheese.... :-p

So I decided to youtube again for the "SURE" successful cheesecake... and this is the one that caught my attention as it was rather straight forward to do...

Recipe stated as Oreo Cheesecake, but after tasting it, we all agreed that it is lemon cheesecake with Oreo Cookie Base...LOL...!!!

P.S: Pardon me for the mess of my cheesecake, as I have yet to buy the proper tin for it...



Oreo Cookie Base

There... My 1st cheesecake....:-)



Ingredients:

1 1/4 cup of oreo, cream filling removed.

1/3 cup melted butter

500g cream cheese(room temperature)

3 tsp gelatin, dissolved in 1/4 cup of boiling water

1/3 cup lemon juice (can put lesser if you do not like too sour)

2 tbsp grated lemon rind

1/3 cup condensed milk

1 cup thickened cream




Method:

1. Blitz oreo in a food processor. In a round spring form pan/round baking tin, add in melted butter to blitzed oreo and press to the bottom of the tin.

2. Chill in the fridge for 1 hour.

3. In a mixer, beat the cream cheese. Add gelatin and beat until smooth (about 8 mins).

4. Add in lemon juice, rind, milk and cream. Mix well.
5. Pour in mixture into tin and chill in the fridge overnight.
