It was Thursday again and I have to bake something for Nic to bring for her dance practice class tomorrow.... But gosh!!! I have totally forgotten about it!!! I think the aircon in my office must have freezed my brain and my mind away...
Nic reminded me, and asked me what I am going to bake.... :-p
So I quickly browse through my recipe book and found this quick and easy cake to bake!!!
Orange Butter Cake
I do quite like this later versions of my butter cake as they are not that buttery and oily.
It gives the cake a very soft and crispy feeling, perhaps healthier a little as the butter isn't that much? hehehe....

The ingredients of the cake is very simple. But I persnally felt that the orange taste wasn't there. Perhaps in my next attempt, I will probably put in more orange juice. As the recipe had called for 1/2 tsp of orange essence, which I didn't quite like the smell and the taste, I added only 1/4 tsp of the essence. But for those of you whom like the orange essence, please put as per recipe had stated. :-D
Ingredients:
125g unsalted butter
120g castor sugar
3 eggs
50g fresh orange juice
1/2 tsp orange essence
130g self raising flour
100g cake flour
Method:
Cream butter & sugar until light & fluffy.
Add in 1 egg at a time, mix well until well combined.
Add in both flour, sifted, into the mixture and mix well until well blended.
Add in the orange juice and the orange essence, mix well.
Bake in a preheated oven of 200degC for about about 45mins or until golden brown.
