I have been thinking what can I do without using an oven to bake a cake. I'm trying to cut down on my baking as we all know, PUB had increase the rates from 1st July... Mummy Eileen tempted me to try out her Oreo Butter Cake that she swears it's good....but I told her no no baking using oven till weekends...:-p
So I was looking at Peng's Kitchen, and I saw her steamed chocolate cake...With my little ingredients left, I managed to make half of the portion as stated in her ingredients.
The cake came out nice and moist. Nic and hubby had one piece each and they liked it. And of course, Mimi tried and she loves it too, cos chocolate is her favorite!!!
Here we are, my Moist Chocolate Cake:)
Chocolate Cake Ingredients:
150g unsalted butter
170g fine sugar (I used lesser, about 150g)
200ml evaporated milk
2 eggs, lightly beaten
125g palin flour
70g cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp vanilla essence
Method:
1. Combine sugar, evaporated milk, vanilla essence and butter in a saucepan. Stir over low heat until the suagr is dissolved and the butter has melted. Remove from heat.
2. Add the beaten eggs into the slightly cooled mixture and stir till well mixed.3. Sift the flour, cocoa powder, baking powder and baking soda into a large mixing bowl. Add the egg mixture over the flour and stir till smooth. (batter should be runny)
4. Heat up the steamer. Lined and grease your tin. Pour the batter into the tin and place into the steamer. Cover the top of the tin loosely with a piece of aluminium foil. (I did not cover as I do not have aluminum foil:-P)
5. Steam over medium heat for 45 mins. Cake is ready if a skewer comes out clean. otherwise, steam for another 5 mins.
6. Cool the cake in the tin before turning out for frosting.
Chocolate Fudge Ingredients:
35g cocoa powder, sifted
50g corn flour, sifted
1 cup evaporated milk
2 egg yolks
175ml water
120g sugar
1 tsp vanilla essence
50g unsalted butter
Method:
1. Mix all ingredients well (except butter). Stir over double boiler at low heat till thickened.
2. Add butter, turn off the fire and stir till the butter has melted.
3. Spread the warm fudge over the cake.
4. Chill the cake in the fridge before serving.
