♡Raspberry Linzer Cookies♡

Linzer sablés (German: Linzer Augen, "Linzer eyes") are a cookie-sized version, made by cutting a circle of a similar dough, covering it with jam, placing a donut-like circle with a hole in the center piece of dough on top, and dusting with confectioner's sugar.
The Linzer is named after the city of Linz, Austria.
They are made of flour, unsalted butter, egg yolks, lemon zest, cinnamon and lemon juice, and ground nuts, usually hazelnuts, but even walnuts or almonds are used, covered with a filling of redcurrant jam or, alternatively, plum butter, thick raspberry, or apricot jam.
They are a holiday classic in the Austrian, Hungarian, Swiss, German, and Tirolean traditions, often eaten at Christmas. Linzer Torte is often made like small tarts or cookies in North American bakeries.

I was browsing one of my chinese baking book I bought recently. So these pretty Linzer Cookies caught my attention... As the dough had to be refrigerated for about 30 minutes, I had asked my maid to help me make the dough and refrigerate it, so that when I get back home from work, I will be able to work on the dough immediately.
Though the dough was refrigerated for about 40 minutes, it was still very soft and unmangeable to cut the shapes out. So after making these cookies, I googled around for other recipes and some of them were eggless and they had refrigerated the dough for at least 1~2 hours. I will probably attempt to bake these cookies again without the egg as my hubby & maid told me that these cookies were great with the jam.. As for the girls, they liked the plain versions plus the little cut-out heart shaped cookies...

These cookies just reminded me of the almond cookies that I had made. Having the similar ingredients, the taste was almost the exact as well. A very smooth and soft texture you will get with these cookies.
Coated the top with icing sugar and spreading the jam on the other.
And the final outcome of these Linzer Cookies were successful, though I had made quite a mess in the kitchen yesterday night :-p

Recipe as adapted from 每天都是餅乾日 by 安星美

Ingredients:
(yeilds about 20 pieces)

110g plain flour
50g almond power
70g icing sugar (I used 50g)
1g salt
1/2 egg
70g unsalted butter
3g vanilla essence

How to bake:
1. Put in the sieved flour, almond powder, icing sugar and sugar in a mixer bowl & mix well.
2. Add in the softened butter and beat till well corporated.
3. Add in the egg & vanilla essence. Beat well until you get a dough.
4. Place the dough into a ziplock bag and refrigerate for about 30 minutes.
5. Roll out the dough till about 0.3cm thick. Cut the dough with your desired shapes.
6. Bake in a preheated oven of 175~180C for about 8~10 minutes.
7. Dust the top cookie with icing sugar and spread the jam on the bottom cookie. Sandwiched them together to get your yummy Linzer Cookies...:)
