Rich Chocolate Cake

It's Thursday again.... Time for me to bake something for Nic to bring for her dance practise on Friday. :))

The last cake I made, the Orange Butter Cake wasn't a hit with the kids, so this time I will make a chocolate cake for them, for sure, it won't go wrong:))

Rich Chocolate Cake

But guess what??? I didn't know what went wrong with me... Maybe I was feeling restless, plus the hot weather.... I had actually left out the butter, which I was supposed to mix together with the chocolate. End up, my chocolate batter was ruined!!! And I had to make a new chocolate batter. This time the chocolate batter was right. But.... the egg white.... was NOT!!! I had already whipped the egg whites but because i had to re-do a new chocolate batter, the egg whites became watery, and so there I go again, re-preparing another egg white... I had wasted time and eggs... GOSH!!!!

Perhaps I did not read the recipe & the instructions properly...???

And the best part was, the cake became like this after it was being baked... I was rather upset as I had made a mess on it... (see the picture of the baked chocolate cake)

I was thinking if this cake is still edible or was it presentable for Nic to bring for her friends....
Hehehehe.... And there, I overturn the cake, with the bottom facing up... Looks quite OK, isn't it. I sliced a thin slice of the cake to try.... Mmmmmm, it was good though!!! Nic loves it too, and she had asked for the chocolate topping on the cake.

I decoreated the cake with some chocolate, gummy bears and some sprinkles on the cake.

At least the cake now looks yummy & presentable :-p

The chocolate cake was dense and of course, the chocolate, makes it GOOD!!!

Nic said her friends love it as well and some of them had 2 slices of the cake!!! Well, the mess was well worthed it, and I will try not to mess up my cakes again...

Ingredients:

150g plain chocolate

75g butter

4 eggs, yolks & whites separated

100g caster sugar

30g self raising flour

Method:

Melt the chocolate & butter over a pot of simmering water. Remove once melted.

Beat the egg white until stiff peaks.

Add in the egg yolks, sugar into the chocolate batter, mix well.

Add in the sifted flour into the chocolate batter.

Fold in the egg white gradually into the chocolate batter, mix until well combined.

Bake in a preheated oven of 180-200 DegC for about 40-45mins or until cake is firm to touch.

Remove cake from oven and leave it in the tin for 20mins before removing the cake from the tin.

I would think, it will be better to beat the egg whites with the sugar... (I'll try next time:)))
