Caramel Banana Coconut Tarts

Hehehehe... I have some balance pastry dough as I had only made 1/2 of the marble cheese tarts.

So I am able to make some more tarts using other fillings.


Caramel Banana Coconut Tarts


Caramel sounds very tempting...

So I decided to try this filling for the balance pastry dough I had left...


Managed to make 3 big tarts and 4 minis.

(1 of the big one is being eaten and tested by me... hahaha...)


Doesn't these tarts look simply tempting....?

To me, they are!!!

These tarts are simply worth trying... For those of you whom have a sweet tooth like me, you might like these tarts. :))




Coconut Fillings

3 eggs

70g castor sugar

50ml UHT whipping cream

100ml fresh milk

20g desiccated coconut

1/4 tsp salt

30g melted butter

Method:

Mix all coconut fillings ingredients. Chill in fridge and set aside.


Caramel Banana

15g butter

50g castor sugar

3 banana

Method:

Cut banana into 2cm sections. Pour butter into a pot, cook over low heat until the butter turns light brown. Add in sugar and cook until melted. Add in banana sections, slightly stir until bananas are coated with caramel. Bake in a preheated oven at 180degC for 25 mins until golden brown.
