Butter Sugar Bread
Below pictures shows the procedure of the proofing period.

Basic Sweet Bread Dough
A
100g bread flour, 70g boiling water
B
300g bread flour
100g palin flour
80g sugar
6g salt
20g milk powder
9g instant yeast
C
175g coldwater
1 cold egg
D
60g butter
Method:
Add boiling water from A into flour, mix until well blended to form a dough. Cover & set aside to cool. Keep it into refreigerator for at least 12hrs.
Mix B until well blended. Add in C and knead to form a rough dough. Add in A and knead until well blended.
Add in D & knead to form elastic dough.
Let it proof for 40 mins.
Divide the dough into 75g each and mould it round. Let it rest for 10mins.
Roll the dough flat into 1cm thick. Place onto greased pan, let it proof for 45 mins.
Egg wash the surface and use fingertips to make small indentation over e dough.
Pipe some soft butter into the indentations and sprinkle top with sugar.
Bake at 180-200degC for 12 mins.
