8th of July is a Durian Night, an annual company event that my MD will always organise during the durian season... So I told my hubby and my colleagues that I will buy extra durians so that I can make a durian cake... any kind... hehehehe
Here is the durian we had yesterday night...
My ingredients.

And it's NICE!!!
The cake is soft and moist, but the sugar level can be cut down as the durian itself is already sweet. But for those of you who like the sweetness, it should be alright:)
Tasted and tested by US:
we think its soft & yummy & delicious, especially it's been eaten warm... :-p
Ingredients:
150g self raising flour
100g butter
100g castor sugar (you can lessen the sugar as the durian is quite sweet)
2 egg yolks
100-150g durian puree
4-5 tbsp milk
2 egg white
20g castor sugar
Method:
1. Whisk butter and sugar til creamy and pale.
2. Add in egg yolk, one by one, mix well. Add in durian puree.
3. Add in sifted flour, mix well. Gradually add in the milk.
4. In another clean bowl, whisk the egg white until foamy and add in the sugar. Continue to whisk till stiff peak forms.
5. Mix some of the egg white into the durian mixture, mix well. Gradually mix in the rest of the egg white and mix till combined.
6. Pour batter into the baking tin and bake in the preheated oven of 180-200 deg C for about 45-55 min or till golden brown. (heating time varies from different oven)
7. Remove the cake from mould immediately.
8. Set aside to cool.
Best to serve warm.:))
