Sweet Dots Swiss Roll

Hello everyone, it has been quite some time since my last post??? Hmmm, I guess I was rather busy at work recently, plus I don't have much time to blog as I was also planning for my upcoming holidays and stressfully teaching Nic her Mathematics... Sigh... Seems like time wasn't enough sometimes, till I felt I haven't had some time for myself...
This Sweet Dots Swiss Roll was baked a couple of weeks ago, and here, and I posting up this swiss roll finally. I had bought the swiss roll recipe book since last year, but I wasn't so "hardworking" to try any of these pattern swiss rolls. They are more of a, suddenly switch-on mode to try baking a swiss roll... Not knowing if my swiss roll will roll up nicely as it should be... hahaha...
Pretty isn't it??? Well the taste is more or less the same, using my previous bake of the Bery Berry Roll, I had adjusted the taste to strawberry, which is the girls' favourite... It was a pity that I did not had fresh strawberries to put them in the roll... else, I would think it will make this roll an even sweet, pretty roll...:-p

I had taken out some white batter out before mixing in the strawberry paste. Separating the white batter into 2, of which 1 was mixed with chocolate paste. Piping the white batter and chocolate batter into dots onto the baking paper, and I bake them in the oven for about 3-5mins before pouring the strawberry batter onto the baking pan.
The girls were pretty excited as they thought it was fun seeing me piping the dots... hahaha...
For the cream, I had used buttercream, adding some strawberry paste as well. I was glad that my roll did not cracked...:-p
The swiss roll all sliced and packed nicely for the girls' convenience...
And of course, here are Nic, Nat & MiMi, having their fair share of the swiss roll...

Christmas Delights Dec 2011

Hello everyone, it has been quite a while since my last posting... I guess everyone of us is busy preparing for Christmas, and spending time with your family and your friends.

In this posting, you will find some of the bakes that I did over the past week. I haven't had much time to post up the recipes too... I will do so when I get a chance. :-p



Gingi Cookies

I actually wanted to bake these cookies for my colleagues as Christmas Gifts.... But I fell sick, so end up I only put some icing on some of the cookies for photography. And the rest of the cookies were left "naked"...

These cookies consists of dessicated coconut. My colleagues tried them and they say the cookies were very good.

This is a Raspberry Log Cake I made for my friend. I didn't know what I should give her for a Christmas Gift, so I thought, a self-made Log Cake will be perhaps a best gift for her.

I had using my Berry Berry Roll to make this log cake, and my Korean Raspberry Syrup to make the cream & the roll as well:-)

My colleague had ordered a Chocolate LogCake, a Milk Roll & a Strawberry Roll for her Christmas Pot-Luck. But I was only able to make a Chocolate Log Cake & a Strawberry Roll for her. :-p

My girlfriend had invited me over to her house on Christmas Eve, so I made thise Chocolate Christmas Cupcakes. Mimi had been eyeing on these cupcakes since I made them in the afternoon.

She said:"Cake Cake, yum yum..."

My boss had invited me over to her place on Christmas Day. She had always loved brownies, so I made these brownie cupcakes for her.

Too Early for a Christmas Log Cake??? - Vanilla Blueberry Log cake

Perhaps not too early...??? I have already seen some places that hadstarted their sale of christmas log cakes and those christmas cupcakes... Such a cutie.... So why not let me try a log cake myself.... I have yet to try out if I can do one...


I have actually bought those christmas decorations from Phoon Huat a couple of weeks back... Finally today I can put them in good use... hehehehe....


VANILLA BLUEBERRY CHRISTMAS LOG CAKE


I have read some recipe books that the christmas log cake is actually done with a swiss roll, topped with either chocolate or cream topping... So I had tried using my own swiss roll and coated it with chocolate ganache.

Nic had requested a vanilla swiss roll with blueberry fillings. The swiss roll was abit spongey and soft, plus with the blueberry filling, it makes it abit flimsy to handle the roll. As the blueberry filling will oozed out when it was been cut. I had to be extremely careful of not breaking the swiss roll and oozing out too much of the blueberry filling... hahahaha...!!!

And of course, finally the roll had been done up nicely... :-D


We tried the christmas log cake the next day....

At least the blueberry filling had settled into the swiss roll and it wasn't that "oozy" as compare to the day before when it was being spread onto the roll....

A weird combination of the swiss roll with the christmas log cake isn't it?


How did it taste like????


Well, not too bad... If you had bought those commercial log cakes and tried them before, I think, self make-cum-bake is still the best!!! This log cake, no doubt of the weird combination, it is rather refreshing because of the blueberry filling. It wasn't too sweet, and the roll was rather soft & spongey... Outside christmas log cakes are usually abit hard and too sweet..., whereas mine isn't... hehehehe....

Green Tea Chocolate Swiss Roll

I have been wanting to make a green tea of any kind, but just that green tea wasn't a favourite at home, except for me.... Anyway, made a green tea chocolate swiss roll this time.


I had wanted to make a marbled effect of the green tea swiss roll, but somehow or rather, it didn't went the way I wanted it... :-p

So end up, I browned the top layer of the "skin".
The swiss roll is, soft as usual, sandwiched with the chocolate cream.

Pandan Coconut Swiss Roll

I sooooo LOVE this Pandan Coconut Swiss Roll...!!!


Of course, they are not the kids' favourite but it is mine!!! hehehehe


My friend had asked me to make a pandan swiss roll for a very long time, but my excuse was, I do not have any pandan juice....

So happened that this month is Aspiring Baker theme of Kueh, I did have some balance pandan juice. So finally here it is....




Pandan Coconut Swiss Roll

I had put pandan juice & pandan paste to enhance the flavour of the cake.

It really smells soooo good and tasted so soft & fluffy!

For the fillings, I had put the whipped cream.

And for the topping, I had put a layer of whipped cream, coated with toasted dessicated coconut flakes.
Verdict of this roll: ???
Fantastic!!!!

A Thousand Sprinkles Swiss Roll

Swiss roll is back again... Nic had prefer the chocolate cake instead of the vanilla one. So today I made another chocolate swiss roll with the thousand sprinkle bits on it.

So pretty & colorful isn't it??

The kids were so excited about this colorful roll. :-D

The kids can't wait to try the swiss roll. But one problem, these sprinkles, when make a contact with cream, they tend to melt. Even though the roll has been refrigerated, the sprinkles still melt.

Hope the girls finished the roll soon... ;-p

I have no idea.... :-p


The girls had finished the Strawberry roll & Chocolate rice roll just over 2 days. They finished the last bits yesterday by having for breakfast and after dinner desserts...

Probably they have the swiss roll craze for this week.... hahahaha....


Vanilla Swiss Roll with Chocolate Cream Chips


Today the swiss roll is fluffy and softer than the previous 2 rolls. It is due to the egg white meringue. If you had beaten the egg whites to stiff peak, it will gives you a very fluffy & soft roll... But a little fragile to handle with... hehehehe....


I had tried the bits and pieces that I cut out, the texture was good..!!!

Hubby had a piece, he said it was very soft.

The girls, they were already in bed when the roll was ready...;))

Well, let's see what other swiss roll I will make next time... :-D

Chocolate Rice Swiss Roll 巧克力米卷

As you can see, my swiss roll had been quite successful and I had half of the whipped cream left.

So I asked Nic if she will like to have a chocolate rice swiss roll. She had been asking me to make since when I first started trying out the swiss roll.
I was quite hesitant to try then as I have a phobia that my roll will crack somehow when I tried to roll it up...

Guess it's not today!!! hehehehe......

Strawberry Swiss Roll 草莓卷

I'm in a mood of making swiss roll today... Partly also because Nat has requested for a strawberry swiss roll. Plus I still have more than a box of strawberries in the fridge... But the 3 girls were sick for the past few days, so the strawberries had been untouchable, and most of them were rotten, luckily I managed to pick some good ones to make this strawberry swiss roll:))

This roll is indeed yummy!!! This time round I did not used buttercream, as Nic does not like the sugar bits in the cream...(maybe I didn't beat long enough to dissolve the sugar:-p)

Instead, I used the top whipping cream in subsititute.


Here, the roll is ready, all rolled up with the cream & the strawberries:-))

I had added strawberry paste to the batter, so the fragrant of the strawberry was rather strong & it really smells soooo goooood!






Not too bad isn't it!

I'm very pleased with the roll that I made today:))


Hubby tried it, he said it was good, Nat had 2 slices of them.

Milk Roll

My colleague sent me a picture that day, a picture of a Milk Roll. I was quite tempted to try it but I wasn't sure if Nic will eat the roll... Well, reason being, the sugar I bought from NTUC doesn't dissolve well into the cream... hehehe, cheapo me, bought the 3kg of sugar because it is cheaper... Anyway, lesson learnt, must use castor sugar... whahahaha!!!

But it cracked along the side, as I think I might have overbaked it, causing it to be too dry...



Nevertheless, it looks as good from this view. hehehehe

If you can see clearly, the bottom left of the roll is crack. :-P

Some of my friends had said I should call this "COW ROLL" or "MOO MOO ROLL"??
Hubby said to call it "CALF ROLL", hmmm or maybe I should call it "咪咪 ROLL"?

LOL... Nic had a slice and she said it's nice... So that means, there wasn't sugar bits in the cream... ;-P

I used the BERY BERRY ROLL method, replacing the raspberry syrup with fresh milk and added 2 vanilla essence.
As for the colors, I use black color for the patches and white color to make the roll abit whiter.
